[livejournal.com profile] dinahmt asked for my recipe for Pumpkin Nut Bread so here it is. Just for fun, I'm also posting my pumpkin pie recipe. It's a little different. :) Oh, and note that the 'coriander' mentioned is the ground seed kind, not the green leafy kind also known as cilantro, which would be supremely icky in baked goods.

ETA: I just noticed that the sugar got left out of the pumpkin bread recipe! Ack! It's in now.


Pumpkin Nut Bread

2 C pumpkin (1 16-oz. can)
¾ C. oil
¾ C. each, white and brown sugar
4 eggs
⅔ C water
3⅓ C flour
2 tsp soda
1½ tsp salt
1 tsp each: cinnamon & ginger
½ tsp each: nutmeg, clove, coriander
1 C. coarsely chopped pecans

Preheat oven to 375, and grease 3 loaf pans. (Or 2 loaf pans and 1 6-count 'large' muffin tin.)

Mix pumpkin, oil, eggs and water. In a separate bowl, combine dry ingredients and mix well. Add dry and moist ingredients and beat by hand until well blended. Portion evenly into greased pans and bake 45-50 minutes or until a toothpick inserted in the center comes out clean.

Maple Pumpkin Pie

2 C. prepared pumpkin
2 eggs
2 Tbsp flour
⅔ C. maple syrup
⅓ C. brown sugar
1 C. half & half (or cream or evaporated milk)
1 tsp cinnamon
½ tsp nutmeg & ginger
¼ tsp allspice, coriander,clove & salt
1 unbaked pie crust
(your favorite recipe, or Pillsbury Ready-crusts are pretty good)

Preheat oven to 425 F.

Combine all ingredients well, pour into pie crust, bake 45-50 minutes. Pie is done when a knife inserted into the center comes out clean.

It's so interesting to find out what things translate across "the pond" and which don't! I recently had to ask someone what 'custard powder' was. :)

"Half and Half" is a mixture of half cream and half milk, usually sold to put in coffee. You can also use full cream, or evaporated milk if you don't want the calories, but it needs to be a little thicker than regular milk or the pie might turn out soupy.

The response I got was: Custard powder is basically cornstarch with added colour and flavourings--you mix it with hot milk to make custard. It can be replaced with cornstarch or omitted altogether.

I love coriander, it's my favorite baking spice, I put it in nearly everything. :)

I usually add coriander to anything that calls for cinnamon, I like the way the two spices augment each other. It's also great in fruit pies of all sorts (as well as cobblers and crisps). I also have been known to put it in pound cake.

I am so going to have to remember that!

I have bread in the oven and pies ready to go (I had to double the pie recipe, all the grocery store had was the big cans of pumpkin. Not that I mind!). Thank you so much for these recipes!

And on a side note, the missing ReGen disc got here this weekend, I expect to send something out to you tomorrow. Did you get the first set yet?

I'm a little scared of coriander in baking, for whatever reason. But since you use it a lot, I've probably had it at your house and I've certainly had no complaints. *G* Let's see how brave I get when I'm cooking for myself...
