Another thing I like about autumn... the cool weather makes it possible to bake without dying of heat prostration. Today's total: 2 loaves of pumpkin nut bread, a tray of pumpkin nut muffins, and a pumpkin pie. I was just going to make pie, but the only can of pumpkin I had on hand was a huge one so I had to do something with the two cups that were still left after the pie, hence the muffins and bread. We also carved our jack-o-lantern, a traditional goofy-evil face, and then made pepitas with the seeds. Those things are crack, I tell you.

I still owe [livejournal.com profile] theamusedone some almond cookies because I discovered I didn't have any almond extract on hand. Must shop before I can do that batch.

Apparently we're getting rain into snow tonight. And did I mention it's been dark since, like, noon? *G* Still, I'm glad for your sake.

It is very seasonal. :) Kid-unit requested pumpkin pie when we were carving the jack-o-lantern this morning. I had to explain that if you're making a jack-o-lantern, you can't also make pie out of it. It's amazing all the things about cooking that I assume other people already know, but then find out they don't. Fortunately I did have a can of pumpkin on hand.

I had to laugh ironically when I heard the forecast change for tomorrow. It just wouldn't be Halloween in Colorado if the weather wasn't miserable!

And I don't think a mini-vacatio in Mexico is too much to ask. Start playing that lottery, woman! ;-D

I use pecans, but mostly because I sometimes have a reaction to walnuts that leaves my mouth feeling kind of shredded. You could use either if you prefer walnuts.

Um, ignorant but interested European here (who considers herself good cook at that): Why can´t you do that? What happens to all the material you scrape out of your pumpkin?

Well, pumpkins are basically a thick, hollow shell which is partially filled with seeds and 'strings'... (a sort of slimy connective tissue that binds the seeds together and carries nutrients to them). What you use when you cook a pumpkin for pie is the shell or flesh part, the 'innards' (technical term!) which are scooped out are just waste, unless you like roasted pumpkin seeds (aka pepitas) which I do so we usually save the seeds, soak them in salt water for a while and then lightly toast them in the oven.
