'Chinese' Almond Cookies

theamusedone asked for my almond cookie recipe, so I thought I'd put it here so others can share too. I inherited this recipe from my mom, and I have no idea what makes them 'Chinese' but that's what they have always been called. I suspect it was one of those 1950's attempts to make an ordinary recipe seem exotic. :) ( recipe behind the cut )
